Jill Guidry's Catfish Pie

Well folks, our first guest blogger submission is from Jill Guidry with her recipe of Catfish Pie!

Recipe for White Sauce

Ingredients:
1 cup milk
2 bay leaves
2 tablespoons unsalted butter
2 tablespoons flour
Pinch salt and white pepper
2 garlic cloves, crushed

Directions In a small saucepan, heat the milk and 1 bay leaf to a gentle simmer, stirring so it doesn’t scorch the bottom of the pan. Keep the milk on low heat. Make a white roux by melting butter over low-medium heat in a thick-bottomed saucepan. Just as the foam subsides, add the flour, stirring constantly with a wooden spoon or whisk to prevent lumps. Cook for 2 to 3 minutes to coat the flour and remove the starchy taste. Do not allow to brown. Remove from heat, then gradually add a bit of the warm milk to the roux and whisk vigorously. Return the saucepan to the heat and bring up to a low simmer, continuing to add more milk and whisk. Cook for 5 minutes until sauce is thick enough to coat the back of a spoon. Check seasoning; add salt, white pepper, garlic and the remaining bay leaf. To prevent a skin from forming as the sauce cools, lay a piece of plastic wrap directly on the surface.



Catfish Pie

Ingredients
1 1/2- 2 pounds skinned catfish fillets
1/2 pint of cider with parsley and thyme in it
salt fresh ground black pepper
1/4 cup of white sauce (make before u start on pie)
1 pound of diced potatoes
2 cloves of crushed garlic
2 leeks chopped fine
1 1/3 cup of mushrooms (slice thin)
1/2 cup of chopped red bell pepper
1/2 cup of chopped celery
1/2 teaspoon of tabasco some Cajun seasoning,
enough pie crust dough to cover the bottom of pie pan and top of pie
1 beaten egg to glaze the crust.

1. Cook the catfish in the cider with the herbs and leeks for ten minutes (season to taste while cooking) and save the liquid.

2. Take the catfish out of the pan and flake it and take out the bones.

3. Cook the potatoes in the fish liquid until they get tender drain them and set them aside.

4. Add all the liquid to the white sauce and stir in the garlic.

5. Line the pie pan with crust and spread the mushrooms bell peppers and celery out then top this with the catfish and potatoes, season again and pour the sauce over the top.

6. Top with pie crust and pinch the edges together, glaze the crust with the beaten egg and bake at 425 for 10 min then at 350 for another 20 min.

Hello, folks! I need a little help. My personal knowledge is on catfishing, but this blog is not solely about catfishing. This is a fishing blog for all kinds of fishing. So, since my knowledge is limited, I wish to find information that we all can learn from. Now, I know some of my fishing buddies are experts at their perticular sort of fishing. And some folks are beginners and would like to learn more about different sorts of fishing, like myself. I haven't a clue on bass fishing, for instance. Hello, to all my fishing buddies!

Hello, I just wanted to say "HI" and let you know that I am indeed, still alive and kicking, and so is the baby! So far, so good. We are now into our 5th month and so excited! I do wish to thank all of you who have left me such great comments with love and prayers included! These comments really do lift me up when I am feeling low. It has been a difficult summer for me, since I have not been able to do much fishing this year. I know it is for my own good that I skip fishing for a while, but it is very, very hard. That is all I am going to say about that.

I have found it awful difficult to find things to talk about on this blog, since it is a fishing blog and I cannot go fishing at this time. I do not wish to change the nature of this blog and I do not plan to, but I also will be giving updates on the baby and other things that may come to mind. The main focus will still be fishing, but please don't be offended if I talk about other things as well. I will also be sharing videos that I find, that are interesting. I want to thank you for all your love, understanding and support. Thank you for supporting Catfishchic's Fishing Blog!

Where has Catfishchic been, lately?

I am sorry for neglecting you folks. I have not been online much at all, in the last couple of months. My husband and I recieved great news around the first of June. We are pregnant! The problem is that I have miscarriages very easily. We were pregnant with twins, but we have already lost one of the babies. So we have been living the last couple of months, filled with worry and fear! We lost a baby last year also. Therefore, I have not been able to go fishing much at all this year, because my husband worries that something might cause me to fall or something, while I am out fishing. We are not out of the woods yet, but I wanted to let you folks know why I have not been providing updated post for you, and I am very sorry for this. I will not be shutting down my blog. I just may not be be posting much until we are out of the woods, and this dark cloud of doom and gloom disappears from our lives, and we are able to enjoy this pregnancy and we can look forward to our new baby. I am having a hard time consentrating on anything these days. I hope that I do not loose any of my followers over this issue. I love each and every one of you. I hope that you understand. Thank You.

I would just like to share this with ya'll. What a great catch! Kudos to Chris Rolph! It looks like he caught it on a rod and reel too. All I can say is "WOW". I am so excited for him! Congrats Chris!
